Make this quick and flavorful cabbage stir fry using a homemade sauce rich with fresh garlic and ginger.

Ingredients

Scale
  • 1 medium head green cabbage, thinly sliced
  • 1 tablespoon neutral cooking oil
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 1/4 cup soy sauce or tamari
  • 2 tablespoons rice vinegar
  • 1 tablespoon brown sugar
  • 1 teaspoon sesame oil
  • 1/2 teaspoon cornstarch mixed with 1 tablespoon cold water (slurry)
  • Optional: 1/4 cup chopped scallions for garnish

Instructions

  1. Prepare the sauce: In a small bowl, whisk together the soy sauce, rice vinegar, brown sugar, and sesame oil. Set aside.
  2. Heat the cooking oil in a large skillet or wok over medium-high heat until shimmering.
  3. Add the minced garlic and grated ginger to the hot oil. Stir fry quickly for about 30 seconds until fragrant. Do not let them burn.
  4. Add the sliced cabbage to the wok. Stir fry for 3 to 5 minutes, tossing constantly, until the cabbage begins to wilt but still retains some crispness.
  5. Pour the prepared sauce mixture over the cabbage. Stir to coat everything evenly.
  6. Pour the cornstarch slurry into the wok. Continue to stir fry for 1 minute until the sauce thickens slightly and coats the vegetables.
  7. Remove from heat immediately. Garnish with chopped scallions if using. Serve hot.

Notes

  • For a complete meal, add 8 ounces of sliced tofu or chicken breast after the ginger and garlic have cooked, and cook until done before adding the cabbage.
  • If you prefer less intense ginger flavor, reduce the amount to 2 teaspoons.
  • Use high heat for the best stir fry texture.
