Ingredients
Scale
12 large jalapenos
8 ounces cream cheese, softened
1 cup cooked, shredded chicken
1/2 cup buffalo wing sauce
1/4 cup shredded mozzarella cheese
1/4 teaspoon garlic powder
1/4 teaspoon onion powder
24 slices thin-cut bacon
Toothpicks
Instructions
Prepare the jalapenos by slicing them in half lengthwise and removing the seeds and membranes. Rinse the halves lightly.
In a medium bowl, combine the softened cream cheese, shredded chicken, buffalo sauce, mozzarella cheese, garlic powder, and onion powder. Mix until fully incorporated.
Spoon the buffalo chicken mixture evenly into each jalapeno half.
Wrap one slice of bacon around each stuffed jalapeno half, securing the bacon ends with a toothpick.
Preheat your grill or smoker to 350 degrees Fahrenheit, or preheat your oven to 375 degrees Fahrenheit.
If grilling or smoking, place the pig shots directly on the grates. If baking, place them on a foil-lined baking sheet.
Cook for 20 to 25 minutes, turning occasionally, until the bacon is crisp and the filling is hot.
Remove toothpicks before serving.
Notes
For a smokier flavor, use a smoker set to 250 degrees Fahrenheit and cook until the bacon is rendered, about 1.5 to 2 hours, finishing with a quick sear over high heat if needed.
If you prefer less heat, use fewer jalapenos or remove all seeds and membranes.
You can brush the bacon with extra buffalo sauce during the last 5 minutes of cooking for more glaze.
