A recipe for crispy baked buffalo cauliflower served on small slider buns, topped with a tangy blue cheese dressing.

Ingredients

Scale
  • 1 large head cauliflower, cut into bite-sized florets
  • 2 tablespoons olive oil
  • 1/2 cup all-purpose flour
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup unsweetened plant milk (for batter)
  • 1/2 cup Frank’s RedHot or similar cayenne pepper sauce
  • 1/4 cup melted unsalted butter or vegan butter alternative
  • 1/4 cup mayonnaise or vegan mayonnaise
  • 2 tablespoons plain Greek yogurt or vegan sour cream
  • 2 tablespoons crumbled blue cheese (or vegan blue cheese alternative)
  • 1 teaspoon white vinegar
  • 1/2 teaspoon garlic powder
  • 12 small slider buns (Hawaiian rolls or brioche recommended)
  • Optional: Shredded lettuce, extra blue cheese crumbles for garnish

Instructions

  1. Preheat your oven to 425 degrees Fahrenheit (220 Celsius). Line a large baking sheet with parchment paper.
  2. Prepare the batter: In one bowl, whisk together the flour, salt, and pepper. In a second bowl, whisk the plant milk until slightly frothy.
  3. Dip each cauliflower floret first into the flour mixture, shaking off excess, then dip into the plant milk, allowing excess to drip off.
  4. Place the coated florets on the prepared baking sheet in a single layer, ensuring they do not touch.
  5. Bake for 20 to 25 minutes, flipping halfway through, until the cauliflower is tender and lightly golden.
  6. While the cauliflower bakes, prepare the buffalo sauce by whisking together the hot sauce and melted butter in a small saucepan over low heat. Do not boil.
  7. Prepare the blue cheese dressing: In a small bowl, combine the mayonnaise, yogurt, blue cheese crumbles, white vinegar, and garlic powder. Mix well until smooth.
  8. Once the cauliflower is baked, transfer the hot florets to a large bowl. Pour the buffalo sauce over the cauliflower and toss gently until every piece is coated evenly.
  9. Assemble the sliders: Lightly toast the cut sides of the slider buns if desired. Place a layer of lettuce on the bottom bun, if using.
  10. Top the lettuce with 3 to 4 sauced cauliflower florets per slider.
  11. Drizzle generously with the prepared blue cheese dressing and top with the remaining bun. Serve immediately.

Notes

  • For extra crispy cauliflower, you can lightly spray the coated florets with cooking spray before baking.
  • Make the blue cheese dressing up to one day ahead and store it covered in the refrigerator.
  • If you prefer an air fryer, cook the coated florets at 380 degrees Fahrenheit for 12 to 15 minutes, shaking the basket halfway through.
