Ingredients
Scale
10 oz breakfast sausage, cooked and crumbled
12 large eggs
1/4 cup milk
1/2 teaspoon salt
1/4 teaspoon black pepper
1 tablespoon butter or oil
8 cups tortilla chips (about 6 oz)
2 cups shredded cheddar or Monterey Jack cheese
1/2 cup chopped green onions, for garnish
1/2 cup salsa, for serving
1/2 cup sour cream or Greek yogurt, for serving
1 avocado, diced, for serving
Instructions
Preheat your oven to 375 degrees Fahrenheit. Lightly grease a 9×13 inch baking dish.
Cook the breakfast sausage in a skillet over medium heat until fully browned. Drain off excess grease and set the sausage aside.
In a bowl, whisk together the eggs, milk, salt, and pepper until combined.
Melt the butter or oil in the same skillet over medium heat. Pour in the egg mixture. Cook, stirring gently, until the eggs are set but still slightly moist. Do not overcook.
Spread half of the tortilla chips in an even layer on the bottom of the prepared baking dish.
Sprinkle half of the cooked sausage and half of the shredded cheese over the chips.
Spoon half of the scrambled eggs evenly over the cheese layer.
Repeat the layering process: remaining chips, remaining sausage, remaining cheese, and remaining eggs.
Bake for 10 to 12 minutes, or until the cheese is fully melted and bubbly.
Remove from the oven. Top the nachos with chopped green onions, salsa, sour cream, and diced avocado before serving immediately.
Notes
For crispier nachos, use a thinner layer of chips and avoid overloading the layers with wet ingredients like eggs.
You can prepare the sausage and eggs ahead of time and reheat them before assembly.
Use sturdy, restaurant-style tortilla chips for the best structure.
Substitute the sausage with cooked bacon or black beans for a different protein base.
