A recipe for a moist quick bread featuring a sweet blueberry batter swirled with a tangy cream cheese filling.

Ingredients

Scale
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup granulated sugar
  • 1/4 cup unsalted butter, softened
  • 1 large egg
  • 1/2 cup milk
  • 1 teaspoon vanilla extract
  • 1 cup fresh or frozen blueberries
  • 4 ounces cream cheese, softened
  • 2 tablespoons granulated sugar
  • 1 large egg yolk
  • 1/2 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350 degrees Fahrenheit (175 degrees Celsius). Grease and flour a standard 9×5 inch loaf pan.
  2. In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
  3. In a large bowl, beat the softened butter and 1/2 cup sugar until light and fluffy. Beat in the egg, milk, and 1 teaspoon vanilla extract until just combined.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix. Gently fold in the blueberries.
  5. In a separate small bowl, beat the softened cream cheese, 2 tablespoons sugar, egg yolk, and 1/2 teaspoon vanilla extract until smooth.
  6. Pour half of the blueberry batter into the prepared loaf pan. Drop spoonfuls of the cream cheese mixture evenly over the batter. Pour the remaining blueberry batter over the top.
  7. Use a knife or skewer to gently swirl the cream cheese layer into the batter a few times.
  8. Bake for 50 to 60 minutes, or until a wooden skewer inserted into the center comes out clean.
  9. Let the bread cool in the pan for 10 minutes before carefully turning it out onto a wire rack to cool completely.

Notes

  • If using frozen blueberries, do not thaw them; toss them lightly in one tablespoon of flour before folding them into the batter to prevent sinking.
  • For a bakery-style top, you can sprinkle the top of the batter with coarse sugar before baking.
  • This bread stores well wrapped tightly at room temperature for up to three days.
