Ingredients
Scale
4 oz chilled dry sparkling wine (Champagne or Prosecco)
2 oz fresh blood orange juice
1 small sprig fresh rosemary
1/2 tsp rosemary simple syrup (optional)
Blood orange wheel for garnish
Instructions
Chill your champagne flutes before starting.
If using simple syrup, prepare it first by combining equal parts sugar and water with a rosemary sprig, heating until sugar dissolves, and letting it cool completely. Remove the rosemary sprig.
Pour 2 ounces of fresh blood orange juice into the bottom of each chilled flute.
If using rosemary simple syrup, add 1/2 teaspoon to the juice.
Gently top the juice mixture with 4 ounces of chilled sparkling wine. Pour slowly to maintain carbonation.
Gently stir once with a bar spoon if needed to combine the layers slightly.
Garnish each glass with a thin wheel of blood orange and a small, fresh rosemary sprig.
Notes
For the best flavor, use freshly squeezed blood orange juice rather than bottled.
To infuse the rosemary flavor directly, gently slap the rosemary sprig garnish between your hands before placing it in the drink to release its oils.
If you prefer a stronger rosemary flavor, muddle one small rosemary leaf lightly in the bottom of the glass before adding the juice.
