Ingredients
Scale
1 lb cooked BBQ brisket, shredded or chopped
4 large flour tortillas
1 cup prepared creamy coleslaw
4 slices pepper jack cheese
1/2 cup cooked white rice
1/2 cup canned black beans, rinsed and drained
1/4 cup your favorite BBQ sauce (optional)
2 tablespoons butter or oil for warming
Instructions
If the brisket is cold, warm it gently in a skillet over medium heat. If desired, stir in 1/4 cup of BBQ sauce while warming.
Warm the tortillas briefly in a dry skillet or microwave until pliable.
Lay a warm tortilla flat. Layer ingredients down the center: rice, black beans, warm brisket, and one slice of pepper jack cheese.
Place a spoonful of coleslaw on top of the brisket layer.
Fold the sides of the tortilla inward over the filling.
Fold the bottom edge up and over the filling, tucking it in tightly.
Roll the burrito forward until completely sealed.
Place the burrito seam-side down in a lightly oiled skillet over medium heat. Cook for 2-3 minutes per side until the tortilla is golden brown and the cheese is melted.
Slice in half and serve immediately.
Notes
For extra flavor, mix a teaspoon of chipotle powder into the coleslaw before adding it to the burrito.
If you prefer a crispier exterior, brush the outside of the rolled burrito lightly with melted butter before pan-frying.
If your brisket is very dry, add a tablespoon of beef broth or water to the skillet while reheating to add moisture.
