Ingredients
Scale
1/4 cup banana puree (from 1/2 ripe banana)
1/4 cup brown sugar
1/4 cup water
1 teaspoon vanilla extract
1/2 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
Pinch of ground cloves
2 shots espresso (about 2 ounces) or 1/2 cup strong brewed coffee
1 cup milk (dairy or non-dairy)
Optional: Whipped cream for topping
Instructions
Make the banana bread syrup: Combine banana puree, brown sugar, water, vanilla extract, cinnamon, nutmeg, and cloves in a small saucepan.
Heat the mixture over medium heat, stirring until the sugar dissolves completely and the mixture simmers lightly. Cook for 3 minutes, stirring often. Remove from heat and let cool slightly. This is your banana bread syrup base.
Strain the syrup base through a fine-mesh sieve into a jar to remove large banana solids, pressing down on the solids to extract liquid. You should have about 1/3 cup of flavored syrup.
Brew your espresso or strong coffee.
In a separate container, heat or froth your milk until hot and slightly foamy.
Add 2 to 3 tablespoons of the prepared banana bread syrup to your mug, adjusting to your sweetness preference.
Pour the hot espresso or coffee over the syrup.
Pour the hot milk over the coffee mixture. Stir gently to combine.
Top with whipped cream if desired. For an iced version, skip heating the milk, use cold milk, and pour over ice after combining coffee and syrup.
Notes
For a thicker, richer syrup, you can skip straining, but the texture will be thicker.
Use very ripe bananas for the best flavor in the syrup.
If using non-dairy milk, oat milk or soy milk tends to froth best.
