A recipe for baked sweet potatoes filled with a rich spinach and ricotta mixture, topped with a fresh herb oil.

Ingredients

Scale
  • 2 large sweet potatoes
  • 1 tablespoon olive oil
  • Salt and black pepper to taste
  • 1 cup fresh spinach, finely chopped
  • 1/2 cup ricotta cheese (whole milk preferred)
  • 1/4 cup grated Parmesan cheese
  • 1 clove garlic, minced
  • 1/4 teaspoon nutmeg
  • 1/4 cup fresh parsley, chopped
  • 2 tablespoons fresh chives, chopped
  • 3 tablespoons olive oil (for drizzle)
  • 1 tablespoon lemon juice
  • Pinch of salt

Instructions

  1. Preheat your oven to 400°F (200°C). Pierce the sweet potatoes several times with a fork. Rub them lightly with 1 tablespoon of olive oil and sprinkle with salt and pepper.
  2. Bake the sweet potatoes directly on the oven rack for 45 to 60 minutes, or until they are tender when squeezed.
  3. While the potatoes bake, prepare the filling. In a medium bowl, combine the chopped spinach, ricotta cheese, Parmesan cheese, minced garlic, and nutmeg. Mix until well combined. Season with salt and pepper.
  4. Once the potatoes are cooked, carefully slice them open lengthwise, leaving the edges intact. Gently fluff the inside flesh with a fork.
  5. Spoon the spinach ricotta mixture evenly into the center of each sweet potato. Return the stuffed potatoes to the oven for 5 to 7 minutes, or until the filling is heated through.
  6. Prepare the herb drizzle. In a small bowl, whisk together the 3 tablespoons of olive oil, lemon juice, chopped parsley, chopped chives, and a pinch of salt.
  7. Drizzle the herb mixture over the warm, stuffed sweet potatoes just before serving.

Notes

  • You can prepare the filling up to one day ahead and store it covered in the refrigerator.
  • For a smoother texture, you can substitute half of the ricotta with cream cheese.
  • If you prefer a thinner drizzle, add one teaspoon of water to the herb oil mixture.
