A simple, viral recipe for baked feta cheese and cherry tomatoes mixed with pasta to create a creamy sauce.

Ingredients

Scale
  • 1 (8 ounce) block feta cheese
  • 2 pints cherry tomatoes
  • 1/4 cup olive oil
  • 4 cloves garlic, minced
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon salt
  • 12 ounces pasta (such as penne or rigatoni)
  • Fresh basil for garnish (optional)

Instructions

  1. Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius).
  2. Place the block of feta cheese in the center of a 9×13 inch baking dish.
  3. Arrange the cherry tomatoes around the feta block.
  4. Drizzle the olive oil over the tomatoes and feta.
  5. Sprinkle the minced garlic, oregano, pepper, and salt over the tomatoes.
  6. Bake for 30 to 35 minutes, or until the tomatoes have burst and the feta is soft and lightly browned.
  7. While the cheese bakes, cook the pasta according to package directions until al dente. Reserve about 1/2 cup of the pasta cooking water before draining.
  8. Remove the baking dish from the oven. Mash the softened feta and burst tomatoes with a fork, mixing them together to form a creamy sauce.
  9. Add the drained pasta to the baking dish and toss everything together until the pasta is evenly coated. Add a splash of the reserved pasta water if the sauce seems too thick.
  10. Serve immediately, garnished with fresh basil if desired.

Notes

  • Use a sturdy fork or spoon to mash the feta and tomatoes together after baking.
  • If you prefer a smoother sauce, you can blend the baked mixture briefly with an immersion blender before adding the pasta.
  • Any short pasta shape works well for this recipe.
