Ingredients
Scale
4 large eggs, hard-boiled
1 medium ripe avocado
1 tablespoon fresh lime or lemon juice
1 teaspoon Dijon mustard
1/4 cup finely chopped celery
2 tablespoons finely chopped red onion
1 tablespoon fresh chives, chopped
Salt, to taste
Black pepper, to taste
4 slices whole-grain bread
Instructions
Peel and roughly chop the hard-boiled eggs. Place them in a medium bowl.
Cut the avocado in half, remove the pit, and scoop the flesh into the bowl with the eggs.
Add the lime juice, Dijon mustard, celery, red onion, and chives to the bowl.
Use a fork or a potato masher to gently mash the avocado and mix the ingredients together. Mash until you reach your desired consistency, leaving some chunks for texture.
Season the mixture generously with salt and pepper. Mix well.
Taste the salad and adjust seasoning if needed.
Divide the avocado egg salad evenly between two slices of bread. Top with the remaining two slices of bread to make two sandwiches.
Notes
For a smoother texture, blend the avocado and lime juice first before mixing with the eggs.
Add a dash of hot sauce or a pinch of curry powder for a flavor variation.
If you prefer a lower-carb option, serve this salad in lettuce cups instead of bread.
You can prepare the hard-boiled eggs up to three days ahead of time.
