Follow these steps to cook tender bell peppers filled with seasoned ground beef and rice using your air fryer.

Ingredients

Scale
  • 4 medium bell peppers (any color)
  • 1 tablespoon olive oil
  • 1 pound ground beef
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 cup cooked white rice
  • 1 (14.5 ounce) can diced tomatoes, drained
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup shredded mozzarella cheese

Instructions

  1. Cut the tops off the bell peppers and remove the seeds and membranes. Set the pepper tops aside.
  2. In a skillet over medium heat, brown the ground beef, breaking it up as it cooks. Drain excess fat.
  3. Add the chopped onion and minced garlic to the skillet. Cook until the onion softens, about 3 minutes.
  4. Remove the skillet from the heat. Stir in the cooked rice, drained diced tomatoes, oregano, salt, and pepper. Mix well to combine the filling.
  5. Stuff each hollowed-out bell pepper evenly with the meat and rice mixture. Place the pepper tops back onto the stuffed peppers.
  6. Lightly brush the outside of the peppers with olive oil.
  7. Preheat your air fryer to 370F (188C) for 3 minutes.
  8. Carefully place the stuffed peppers into the air fryer basket in a single layer. Do not overcrowd the basket; cook in batches if necessary.
  9. Air fry for 15 minutes.
  10. Carefully remove the tops of the peppers. Sprinkle the shredded mozzarella cheese over the filling of each pepper.
  11. Return the peppers to the air fryer and cook for an additional 3 to 5 minutes, or until the cheese is melted and bubbly and the peppers are tender.
  12. Remove from the air fryer and serve immediately.

Notes

  • If your peppers are very large, you may need to add 2-3 minutes to the initial cooking time to ensure they soften sufficiently.
  • To prevent the filling from drying out, you can place a few drops of water in the bottom of the air fryer basket before cooking.
  • For a vegetarian option, substitute the ground beef with 1 pound of cooked lentils or a mixture of mushrooms and black beans.
