You can make restaurant-style, perfectly seasoned potato wedges right in your air fryer. This easy recipe delivers that desired crispy exterior and tender, fluffy interior every time, making them a healthier alternative to deep-fried versions. They are quick to prepare and perfect as a side dish or snack.

Ingredients

Scale
  • 4 large Russet potatoes
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Optional: 2 tablespoons grated Parmesan cheese (for topping after cooking)

Instructions

  1. Wash and dry the Russet potatoes thoroughly. Cut each potato lengthwise into 8 equal wedges.
  2. For extra crispness, soak the cut potato wedges in cold water for at least 30 minutes. Drain them completely and pat them very dry with paper towels. This step removes excess starch.
  3. In a large bowl, toss the dry potato wedges with the olive oil until they are lightly coated.
  4. In a small bowl, mix together the garlic powder, onion powder, smoked paprika, dried oregano, salt, and black pepper.
  5. Sprinkle the seasoning mix over the oiled potato wedges and toss again until every wedge is evenly coated.
  6. Preheat your air fryer to 400°F (200°C).
  7. Place the seasoned wedges in the air fryer basket in a single layer. Do not overcrowd the basket; work in batches if necessary to achieve maximum crispness.
  8. Air fry for 15 to 20 minutes, shaking the basket vigorously halfway through the cooking time (around the 8-minute mark).
  9. Check for doneness; the wedges should be deep golden brown and crispy on the outside.
  10. If using, immediately toss the hot wedges with the grated Parmesan cheese before serving. Serve your crispy potato wedges right away.

Notes

  • If you prefer a spicy kick, add 1/4 teaspoon of cayenne pepper to your seasoning blend.
  • For a different flavor profile, try substituting the oregano with 1/2 teaspoon of dried rosemary.
  • If you skip the soaking step, you may need to add 2-3 minutes to the total cooking time.
  • This recipe works well as a game day appetizer or a simple air fryer side dish.
