Make a quick and crispy corned beef hash using your air fryer. This method yields perfectly browned potatoes without excess oil.

Ingredients

Scale
  • 1 tablespoon olive oil
  • 1 cup diced cooked potatoes (about 1/2 inch pieces)
  • 1 1/2 cups chopped cooked corned beef
  • 1/2 cup chopped onion
  • 1/2 cup chopped bell pepper (any color)
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon black pepper
  • Pinch of salt (optional, corned beef is often salty)
  • 2 large eggs (for serving)

Instructions

  1. In a medium bowl, toss the diced potatoes with half of the olive oil, ensuring they are lightly coated.
  2. Preheat your air fryer to 380°F (195°C) for 3 minutes.
  3. Place the seasoned potatoes in the air fryer basket in a single layer if possible. Cook for 8 minutes.
  4. While the potatoes cook, toss the corned beef, onion, and bell pepper with the remaining olive oil, garlic powder, and black pepper in the bowl.
  5. After the 8 minutes, shake the basket well. Add the corned beef mixture over the potatoes. Return the basket to the air fryer.
  6. Cook for another 8 to 10 minutes, shaking the basket halfway through, until the potatoes are crispy and the beef mixture is heated through.
  7. While the hash finishes, cook your eggs to your preference (fried or poached work well).
  8. Serve the hash immediately topped with the cooked eggs.

Notes

  • For extra crispiness, spray the basket lightly with cooking spray before adding ingredients to prevent sticking.
  • If using canned corned beef, drain any excess liquid before chopping and mixing.
  • You can substitute sweet potatoes for white potatoes, but adjust the initial cooking time by 2 minutes.
